Freshman Again

So last wednesday I was driving down ninth in P-town and to my shock, the building I lived in my freshman year, Kimbal Hall, was torn down!! AHHHHH. I called Anna, a freshman year roomate, right away. Apparently Veronica, another roomate, was driving by around the same time cause she had texted Anna about 5 seconds before my call. Apparently just the day before it was standing so it must have been demolished on Wednesday.

On Saturday Casey went to a "man-movie" with the goupe (ryan) and I had lunch with Anna and Veronica. It's been a really long time since just the three of us got together. It started out at Costa Vida and we talked for like 3 hours before we decided we needed to get a picture in front of at least the rubble of Kimball Hall since we didn't make it in time to get a picture before it was torn down.

Then the REAL fun began. We all wanted to see the inside of the new dorms. Someone had the GENIOUS idea to pretend that we were gonna be freshman next year and that we wanted to see what the dorms looked like because we were deciding where to live next year!!! We had a total blast. We walked right into one of the dorms and met Chasely Jensen from Arizona. I feel really bad that we lied to her so much because she was SUPER nice. She was extremely kind to us and if we really had been freshman I'm sure we would have appreciated her generosity a TON. But instead we asked her a ton of questions just to see what she'd say. We asked her about classes, about her roomates, about the other dorms, about dating, about her teachers, about what classes to take... we were killing it! The funniest question was about dating... she told us that she dates A TON. I think all three of us wanted to laugh our heads off just at that comment because none of us hardly dating our freshman year. Instead I said (yes-I think i'm just that funny) "I don't think my boyfriend will like that". We asked her how it was like living with friends cause "we just didn't want living together to ruin our friendship". At one point I even pointed to one of the old heritage halls buildings still standing and said "EWW who would live in there!?". Haha.. Needless to say I can't remember the last time I laughed so much!! It was great. Thanks for creating good memories, Anna and Veronica.

Soldier Hollow

So a few weeks ago I got a groupon for tickets to Soldier Hollow... a tubing hill in Midway. It is normally $20 for 2 hours but with the groupon it was half price. I switched my shift at work so that I could get off early and Casey didn't have school so last tuesday was the perfect day.

We had a TOTAL blast. At first the hill was super slow so the tubing itself wasn't that much fun but I was super happy to be up in Midway -aka not at work- doing something a little different with Casey. You know when Casey and I are in good moods when we are teasing each other. The man wouldn't stop pushing my tube away from me, pushing me around, racing me (and always winning) and I did the same to him. The guys up there running the show asked us how long we had been engaged for! By the last hour we were there it got colder so the hill got much faster. It was tons of fun to go down!









My favorite part of the day was when Casey and I had just got down the hill and we were chatting with the guy working. We are facing the bottom and don't see that there's someone coming super fast behind us. The guy stops mid-sentence and screams "dig your heels in". The older chinese lady cannot reach the ground the way she is sitting in the tube and crashes into the netting at the bottom (meant to catch fly-aways) and she does a back-flip out of her tube. I cried cause I was laughing so hard.

After tubing we went to a DELICIOUS restaurant up there with Jake and Hayley and had a really fun time with them too :)

Godfrey Family

I'm pretty stinking excited for our family to be all together again! Only sixteen more days until Matty gets from his two year LDS mission to Sao Paulo, Brazil and I can't freaking wait!! Martin will also be here from North Carolina and the eight of us (michele, martin, julie, andrea, me, matty and brent and celine) will be going on a trip together! Pretty cool.

Valentines

I LOVE these girls!! Stacie was down from Idaho so we got to get together. We went to kneaders for breakfast and the place was packed with groups of older ladies. I hope that that is us in 50 years from now... still getting together!

Every wednesday I go to the temple with Corrine. I have a seriously huge spot in my heart for my dear friend, Corrine. I feel blessed that I get to spend some special time with her each week and know I will cherrish this for the rest of my life.

After doing the above Valentines, so many people were interested that with the help and suggestions of some of my friends and family, I decided to also make these sayings for married couples! This is meant to be for fun and I really hope it doesn't offend anyone. Great to celebrate a wedding anniversary - give them a different treat each day leading up to your anniversary! You can do this for the couple weeks before, or even the month of your anniversary (depending on how far into the month your anniversary is :).

Chicken and Football Oreo Truffles

DELICIOUS!!

(especially with red mashed potatoes)

4 chicken breasts
Bacon slices
Salt and pepper to taste
Garlic powder
Chili powder
Brown sugar

Cut each breast into 3 pieces (12 pieces), season all the chicken with the spices, then wrap a bacon slice around each piece, roll in brown sugar and place into a cooking-sprayed oven proof dish. Also great on the grill! No juices to drizzle on anything, but still delicious.
Bake at 400 degrees for 30 to 40 minutes or until chicken is cooked through and bacon is nice and brown and crispy. Delicious served with mashed potatoes with some of the gravy from the chicken drizzled on top.



Oreo Football Truffles

I felt like being festive this year and I came up with this all by myself!! So I LOVE oreo truffles and thought it would be cute to shape them into footballs instead of balls! Casey and I babysat for his sister on Saturday night so I had the girls help me. We had a blast. We did a scavenger hunt in the grocery store to get the ingredients and I think the girls had a lot of fun getting messy shaping the footballs. So we got white chocoloate and put red food coloring in it, then got white icing and did the football markings. The recipe is really easy and SUPER good.

1 pack oreos
1 pack cream cheese
1/2 bag chocoloate chips

Crush the oreos and then mix with cream cheese. Shape into balls and cool. Then melt the chocolate and dip the ball in it. Chill and Enjoy!
