Just Dance

Lately

Okay, I can admit this post is pretty random. This post is kinda a collection of a few things that I've wanted to post as a Facebook update latetly but for one reason or another I chickened out or just didn't... so here goes.


These put a smile on my face!


LOVE having the whole gym all to myself. This means I can do that butt work out that I would never do with any sort of human being around.


My first pair of skinny jeans!! Hayley, if you are reading this, I have confession to make. You know that pair of skinny jeans we got together at Old Navy on black friday? Well I returned them... about 30 minutes after we got them. I totally chickened out. BUT.... this past weekend I went and bought this pair for $10.50 at Forever 21 (10.50 being a price I could deal with if I never ever wore them) and totally wore them Saturday AND Sunday. You would have been proud of me. Also, Anna don't judge me for blogging about this... YES, i'm just that proud of myself over skinny jeans. I'm also wearing a necklace we made for homemakers :)


Watching Casey play basketball... story of my life. I like it much better than watching football on TV so I probably should not complain. Casey is on 3 basketball teams right now and two soccer teams. Soccer totally trumps everything though because I'm on of his two and his other team is AWESOME FUN to watch.


This is my view from my desk at work everday morning. Pretty good!


Thai Food
So Casey and I go through phases where we LOVE to eat at certain restaurants. Normally we eat there so much in a short period of time that by the time the phase is over we have a hard time going back for a WHILE. We've done this with L&L hawaiin BBQ, The smoking apple, Cafe Rio (casey's kinda cafe rio'd out... but I don't think I will never ever be. I'm a Cafe Rio'er for life), and Wallabys. Only I say we are also still in our Wallaby's phase... YMMM smashers! Well lately we have been in a Thai food kick. We've had it atleast once a week for the last month and both of us feel like we could eat it everyday. I get the Yellow Curry and casey gets the Green Curry. It is just SO stinking delicious!! I will say thought that I think curry is an acquired taste. The first time we had it, it was ok-nothing special. Then we went back cause our friends wanted Thai and we liked it a little better. After the third time, we were hooked!!



Gratitude is the key to abundance Casey worked with an elderly man over the summer doing landscaping at the hospital. This was one of his many sayings that Casey and I like so much we always wanted to remember it. My sister Michele gave me these vinyl letterings for my birthday (thanks again, you're such a great sister :)) and we put it over our front door.

Easy Garlic Chicken Recipe

Ok so this might be bad, but I pretty much base whether i'm going to try a recipe or not based on the amount of ingredients. If the list is long, forget about it. This recipe had few ingredients, was SUPER easy, ... and super yummy. Welcome to the Nicole Houghton regular list.


Ingredients:

4 boneless skinless chicken breasts
4 garlic cloves , minced
4 tablespoons brown sugar
3 teaspoons olive oil

Directions:
1. Preheat oven to 500°F and lightly grease a casserole dish.
2. In small sauté pan, sauté garlic with the oil until tender.
3. Remove from heat and stir in brown sugar.
4. Place chicken breasts in a prepared baking dish and cover with the garlic and brown sugar mixture.
5. Add salt and pepper to taste.
6. Bake uncovered for 15-30 minutes.

Holiday Season

It's been so crazy at work that I feel like this holiday season has kinda flown by. Here are just a few pictures of Casey and I wishing you a very late Merry Christmas and spending time with family.








Happy New Years!! This year on new year's eve we went up to Julie and Jeremy's new house to help them move a little bit. After that we met up with Michele and Rich, my mom and dad and Famous Daves. Then we went over to Michele and Rich's to play games (my favorite moment of the night involving some "lait") then went back to my parents to celebrate the New Year.




Even though you can't really tell from this picture... the view of the fireworkds from my parents house was AWESOME!

David freakin Archueleta

Ok ok YES, if you haven't noticed already i'll just admit it. I have a crush on David. I am madly in love with my husband... but I also happen to have a not-so-small crush on cute as can be David. Hayley and I have shared these fond feelings since we watched American Idol what feels like decades ago. It was so fun to go to his concert and feel like were were young, single, silly girls again.

I do have a disclaimer, however. While we were giddy and I fully enjoyed that... the whole place was packed with OLD people who were more giddy than we were. Yah... there was a few teenage girls there.. but I would have to say most people in the room qualified for social security. The 50ish year old dentist sitting next to me gave David a standing ovation after every single song! The two ladies in front of us were great! Just about every time he annouced what song he was gonna sing, the ladies in front of us would turn to each other and say something like "OH MY GOSH, THAT IS MY FAVORITE! HE IS SOOOO CUTE". It was such a fun night. Hayley- I kinda hope that is us 60 years from now... still drueling over under-aged boys!!






Twenty four!

As per our annual tradition, Casey and I went to the Cheesecake Factory for my birthday. There is just something about thier Chicken Madeira and Red Velvet Cheesecake that can make a girl smile for an entire year! As usual, it lived up to all my hopes and dreams... only this year I was lucky to have some friends with us too!

I do have to say that our waiter was HIGHLY annoying because he kept calling us "kiddo's", but he redeemed his tip by decorating my cheesecake :)






We also went to the new H&M next door and I LOVED it. We may have to add that to the tradition... dinner and I get to pick something out at H&M :). The boys had more fun than would be willing to admit...


Family Cruise!!!

Well hello there long lost blogging friends!! With my workload tripled at work from October-December... blogging was put on the back burner. In case you were wondering... I work at a surgery center and we get slammed the last few months of the year with people who have met their deductible and decide to have surgery. I could go into details but i'll refrain from boring you and just say it has been absolutly CRAZY. Hence... why i'm blogging about the last few months, now... in January :)


So my parents have said that if we could get the family together, they would pay half for us to go on a family cruise. I found a great deal on a five day cruise spending two of the days in Cabo San Lucas, Mexico. We didn't end up being able to get the whole family together... just six of us actually, but I'm so glad that we went. We had a blast!! Casey and I felt very spoiled and we absolutely loved spending the time away with family.
