FUN aunt!

I just love hanging with Cole and Livia. They are so dang cute!!


Last week I babysat them. I gave them each shopping lists earlier in the day and they knew what they would be in charge of when we went to the store that night. Cole was in charge of shrimp and stuff for pizza, and Livia was in charge of stuff for cupcakes. She got to pick everything out (strawberry cake mix is her choice). It was probably a halarious site seeing me with two kids who wouldn't let go of my hand, or their basket.

The Chocolate Extravaganza

For my work we do this event every year... the Chocolate Extravaganza. It's a benefit gala for the NICU and pediactric services at Utah Valley Regional. This year was my first year and I had a really good time! I didn't get great pictures... but here is what I do have.


This is Jenny Oaks Baker... apparently a pretty great violinist.




Needless to say, there was LOTS and LOTS of yummy chocolate!!

FOOD!

This isn't a great pic... but Easton had his first taste of something besides boob juice this weekend!! He has been acting hungry still after i've fed him lately and the doctor told me a month ago I could start. I've heard starting your kid eating food too early can lead to food allergies... but I'm pretty sure Easton was ready. I'm excited for him to try something besides oatmeal now!

Thai Curry

 
Ever since my sister taught me how to make this Thai Curry... we have had it almost twice a week!
 
What you will need ( I always eyeball it. this is approx. for about 4 people):
  1. 1/2 cup Curry Paste (Green, Masaman, Yellow... whatever)
  2. 1 can Coconut Milk
  3. 1 cube Palm Sugar
  4. 2 tablespoons Olive Oil
  5. Meat (we use Chicken)
  6. Vegetables (we used potatoes, carrots, zucchini, bamboo shoots. Also good with peppers, onions...whatever)
  7. Rice
We use Mae Ploy curry and coconut milk. We've tried other kinds of coconut milk and it's just not as good. Also the lady at the Asian market said Mae Ploy is by far the best.
 
 
 
 

  1.  Heat up the curry in olive oil.
 
 
2. Add the potatoes and carrots, then 1/4 of the can of coconut milk.
 

 












3. Start the rice
 

4. Get the chicken, zucchini, bamboo shoots ready (cut up). 
 
 
 
5. When the potatoes and carrots are starting to get soft, add the chicken.
6. When the chicken is cooked, add the other vegetables.
 
 
 
 
 
 
 
 
 
 
 
 
 7. Break up the palm sugar.
 
 
8. Add the rest of the coconut milk and the palm sugar. Cook a few minutes until the sugar is dissolved, and VOILA!!
